Easy Lentil soup

Ok, this recipe is really simple and tasty. You can alternate it as you like.

1/2 a bag of lentil

2 jars of tomatoe juice (I use homemade, but you can buy it in a can at the store)

Dump in some chopped onions - I used the spice "chopped onions"

Then I added some beef soup base to give it some flavor- I think I used four tablespoons, but you can flavor to your taste

salt and pepper to taste

I threw in some minced garlic- 1/2 of a tablespoon

Then you boil it until the lentil is done

Then I added a can of drained mixed veggies. (one big can or several of the smaller cans) I wanted it thick- so I added three small cans

Note you can use all fresh veggies in this recipe, just add then when you start to boil the lentil, Same goes for the onions.

I get addicted to this stuff. I think cause it is so salty. So, if your watching you salt intake I would beware.


ps: Barley would make a nice addition to this recipe, but I didn't have any on hand to try with it.
