Baked Salmon

I had never baked salmon before but this turned out great.  I took a recipe from Recipezaar and modified it from its original 563 calories/serving down to this, which I estimate to be about 300 calories/serving (maybe less).

This makes two servings.

Ingredients:

2 cloves garlic, minced

1 tsp dried basil

1/2 tsp salt

1/2 tsp black pepper

1 tablespoon lemon juice

1 tablespoon fresh parsley, chopped

2    6 oz salmon steaks or fillets (I made this with salmon steaks; the cooking time may be less for fillets)

1 lemon, sliced into 6-8 thin slices

Instructions:

1.  Mix all ingredients except salmon and lemon slices in a bowl and stir it up. 

2.  Coat the salmon in the mixture.

3.  Lay out a long piece of tinfoil.  Place two lemon slices on the tinfoil, place the salmon on top of the lemon slices (this keeps the salmon from sticking to the tinfoil without using oil), then spoon half of the remainder of the mixture on top of the salmon.  Put two more slices of lemon on top of the salmon and wrap the foil up tightly.

4.  Repeat step 3 with the other salmon steak.

5.  Place both tinfoil packets in the fridge for at least 1 hour.

6.  Preheat the oven to 375 degrees F (190 degrees C).

7.  Take the packets and place them in a glass baking dish. 

8.  Bake in the oven for 45 minutes or until a meat thermometer says it is done.

9.  Enjoy!

 

This recipe is great for rainy weather when you can't grill outside, or anytime you want to whip up some salmon.  My boyfriend actually likes it better than salmon on the grill.  It goes great with steamed broccoli!  Mmmm...

Hope you don't mind. I just thought I would add this recipe that I got from a friend. I was telling him that I just couldn't eat salmon no matter how much I tried. I just didn't like it. He said to try this recipe. And I loved it.

I will also be trying yours that you posted. I think that salmon is something you just have to learn to like.

This is a rub that you put on the salmon and then leave it in the refrigerator overnight or at least for an hour.

I take olive oil and rub it on the salmon, then add 1 tsp cumin ground, 1 Tbs brown sugar, 1 tsp chili powder, 1 tsp dried mustard. I rub all this in the salmon and put it in the refrigerator. Then later I bake it in the oven until it is done. I like my fish very dry, so I cook mine for as long as possible.
