Low Fat Curry

chop vegetables (your preference but there should be variety)

1.5 cup Cauliflower
1.5 cup Brocolli
1/2 cup Mushrooms
1/2 red pepper
Handful of spinach
Ground beef (or turkey or chicken)
Patak curry paste (little jar, comes in all flavors of curry)
2-3 cups water or stock

Brown ground beef, drain on paper towel squishing all the fat you can out. Place vegies in bottom of pan, place beef on top. Mix 3-4 tbsp of curry paste with water or stock and pour over (start with smaller amount of broth). Cover pan and slowly steam over low heat. Stir after 10 minutes. Sprinkle spinach on top to steam. Add more water to thin broth, leave lid off to thicken. Serve over brown rice. You could also stir in some Chick peas and not serve over rice. This made enough for 4 servings of about 3 cups each Total calories 162 per serving

Hi hprints -

Any chance you have a veggie version? If not, don't fret, as I usually use curry (the real Indian stuff) as dinner on one of my 'lapse' days.

Then I cut out something else (usually fatty) to counterbalance it.

nevd, for the vegie version I would simply take out the meat and add Chick peas and reduce the water or stock slightly. The number and type of vegies with the beans would be a protein correct?
I'll remember to post vegie versions whenever I add a recipe. :smile:
