Fresh Italian Turkey and Tomato Sauce with Mushrooms

  • 1 large can diced tomatoes
  • 1 pound all white meat ground turkey breast
  • 3 small green peppers, diced
  • 1 1/2 onions, diced
  • 4-5 cloves garlic, minced
  • 8 oz. fresh mushrooms, sliced
  • 1 Tablspoon plus 1 Teaspoon olive oil
  • Italian seasonings, salt and pepper
  1. Heat 1 Tablespoon olive oil in large pan.                                                                  
  2. Add turkey. Brown 6 - 7 minutes.                                                                                   
  3. Add onions and green peppers. Cook 3 minutes. Stirring often.                                     
  4. Add garlic, cook 5 minutes more, stirring often.                                                         
  5. Add the remaining 1 Teaspoon olive oil and then the mushrooms. Cook 5  minutes.                                                                                                  
  6. Add can of tomatoes, salt, pepper, crushed red pepper flakes, basil and oregano.  Simmer, uncovered, for 10 minutes more, stirring often.
  7. Enjoy!

    Makes approx 8 cups.     130 calories per cup.     1.5 grams fat per cup.
