- 1 large can diced tomatoes
- 1 pound all white meat ground turkey breast
- 3 small green peppers, diced
- 1 1/2 onions, diced
- 4-5 cloves garlic, minced
- 8 oz. fresh mushrooms, sliced
- 1 Tablspoon plus 1 Teaspoon olive oil
- Italian seasonings, salt and pepper
- Heat 1 Tablespoon olive oil in large pan.
- Add turkey. Brown 6 - 7 minutes.
- Add onions and green peppers. Cook 3 minutes. Stirring often.
- Add garlic, cook 5 minutes more, stirring often.
- Add the remaining 1 Teaspoon olive oil and then the mushrooms. Cook 5 minutes.
- Add can of tomatoes, salt, pepper, crushed red pepper flakes, basil and oregano. Simmer, uncovered, for 10 minutes more, stirring often.
- Enjoy!
Makes approx 8 cups. 130 calories per cup. 1.5 grams fat per cup.
