I will never try to pass a recipe off as my own. Being that I do not follow 1 weight loss plan I use recipes that I know my family will like and are quick to prepare. We normally have to have dinner eaten in about an hour. We do our best to eat healthy meals but do not exclude everything 'evil' ......I will share what I cook with any changes I have made
Hope someone out there will find as much pleasure in these meals as we have here.
As an added note, we start every dinner with a green salad of some sort with a low fat dressing. I should have stocks in Kraft. ;)
Ginger-Mustard Pork Chops
4 boneless pork loin chops, 3/4 inch thick
2 tablespoons flour
1 teaspoon butter
3/4 cup chicken broth
2 teaspoons minced fresh ginger
2 teaspoons Dijon-style mustard
2 teaspoons grainy mustard
4 green onions, minced
freshly ground pepper, to taste
Dust chops lightly with flour. Melt butter in nonstick skillet and saut'e chops over medium heat until brown on both sides, about 4-5 minutes per side. Remove chops and keep warm. Pour broth into skillet, increase heat and scrape loose browned bits from bottom of pan. Add ginger and cook, stirring frequently, for 2 minutes. Stir in mustards and green onions. Seasoned with pepper. Spoon sauce under chops
Makes 4 servings.
Per Serving Calories...190...Fat...7 g...Fiber...0.5 g.
The only difference I made to this is that I used honey mustard instead of grainy, I did not have any. Oh, I did add a little extra broth it seemed to disappear when cooking.
I served this with roasted red potatoes tossed with mushrooms, red onion, 2 tbsp olive oil, minced garlic and black pepper plus steamed green beans tossed with 1 tbsp light Italian dressing and almonds
