what is the diff between pan seared vs. seared?
i have 2 options for dinner....
pan seared chilean sea bass with creamy olive polenta or
seared tuna with chinese eggplant.
which one is lower in calories and fat? ahh!

| Pan seared is in a, well, pan and seared is, usually high temp grilled. (you can also sear a couple of other ways but this is the most likely.)

I think your main calorie differences aren't going to be in the meat - both are fish, and both cooked in a dry manner. It's the side dishes that are very different - polenta isn't terribly unhealthy in itself, but the word "creamy" gives a clue that this recipe is probably pretty rich. Whereas eggplant is really low calorie, as long as it isn't swimming in butter. Still, I think don't think that either option would be too bad. Hope that helps a bit

ok... so it is a prefixed menu... any idea how many cals this will add up to???
course 1
sweet corn macchiato with pernod creme
course 2
baby arugala salad with herbs in a roma tomato dressing
course 3
steamed chilean sea bass with steamed veggies (i called they can do this)
course 4
either chocolate ganoche tart or aborio rice pudding with fresh berries
hellllllllllllllllllllllpppppppppppppppppppppp!!!

Ah, a challenge! Let's see:
Course 1 sounds like a soup, specifically a cream soup with at least a dollop of creme fresh on it. If it is an amuse bouche you are looking at maybe 75 cals, if it is a cup maybe 225. If it's a bowl, eat only half.
Course 2 is actually trickier because it's a matter of how heavy handed the line chef is. Order the dressing on the side to save some cals. All the veggies are fine, of course, but with a heavy hand of dressing you are looking at ...hmmm... I'd say 350 cals.
Course 3, excellent choice. Assuming a 6oz serving of fish and a lack of any butter or oil on the veggies about 300 cals. You may want to make sure they will not be putting any sauce on after the steaming.
Course 4, yikes. No way to predict this. Just eat the berries if you can. High end rice pudding often is made with heavy cream. The chocolate torte may actually be a better choice because of the richness. It may be very small.
All this being said, you should really just enjoy yourself! This one meal does not define how well you do with your goals. Make some sacrifices that day, and maybe the next, and just enjoy!

Eh, live a little. If it makes you feel better, treat yourself to an extra workout afterwards.

i am freaked out!
i am not gonna do soup at all...
salad i am gonna get dressing on side..
dessert i am gonna do just the fresh berries...
think 500 for whole thing or more???
someone PLEASE PLEASE help!
i have to log it all for nutritionist.
i am slowly overcoming an ed and am going through refeeding syndrome and am not allowed to intake too much.
please.....

Well, if that's the case, skip the soup (give it to someone else) or maybe I was wrong and it will be something else - still give it to someone else. And skip desert, except the berries.
Then yes, I think you'll be at about 500 cals.
