Ok, I love cheese and can't live without it. So, was wondering if anyone out there has a great alternative to cheese or any good low calorie cheese products that they use.

I use the fat free shredded cheddar. And it is nasty, so I am looking for other options.

I don't mind the low calorie Velveeta, but I hardly use that cheese for anything anymore. I do use some of the lower cal cheese slices and they are ok.

What about mozzarella? Is it that bad for you?

ok, everyone opinions on cheese......

I like Swiss cheese the best at this point. It pretty much has the same amount of fat as other cheeses, but the sodium is much lower (about 50 per slice).

I've considered going fat-free, but I decided not to. Fat increases the absorption of nutrients. Without the cheese, my post workout meal has very, very little fat, so adding a slice of cheese to my sandwich helps my body get the most out of everything else I eat. I make it a point to eat some fat at every meal for this purpose.

I've eaten mozzarella several times since I started this, also. The key is moderation - can you just eat 1-2 servings of cheese and call it a day? It's hard to do - I love cheese, too. :grin:

I do allow myself to have some and I am not at all concerned that I will gain weight from the cheese. My thing is my cholesterol. I can't have the fat in meats and dairy products. So, that is why I am trying to cut way back on the cheese.

I am just going to have to suck it up and not have so much of it.

I went for months without any and then we went to a packer party. One of the guys there brought my favorite cheese from the local cheese factory. Oh god! I could not stop eatting it. It was almost embarrassing. I was scarfing this poor guys cheese down like nobodys business. I think I would of rather took the cheese home instead of my husband, lol.

So, since then I try to allow some, so I don't go on a binge.

have you ever tried soy cheese?  i have only had it once and it wasn't too bad (on a pizza.  i found out that i am a bit lactose intolerant.  probably mostly "lactose annoyed".  yup, it sucks, i love cheese... mmmmmm... somked gouda and havarti... divine!).you might hate it, but it might be worth a shot? maybe it will grow on you?  that's about all i can suggest...

I pick cheeses that have a strong flavor and use less of them.

For example, feta for salad ( or blue cheese).  Super sharp cheddar is a good one for sandwiches.  I find it better to have a strong full flavor rather than a reduced fat one, in order to satisfy my taste for cheese.

I actually did find a pretty good 1% milkfat cheddar - it was Cabot I believe.  A little dry but it grated well and tasted WAY better then fat free (yuck!) and had far less fat/cals then even 2%.

Not 100% sure this works with fat-free yogurt, but works really good with low-fat yogurt....

I like to make yogurt cheese which is really simple because you just mix in any spices and finely grated herbs/garlic/pepper/whatever with a large container of  plain yogurt, dump the entire thing into cheese cloth and secure with a rubber band, suspend over  a bowl in the fridge and just replace the bowl (which collects the liquid) every day until the cheese forms the consistency you like (ranges from really soft to semi-firm..   The result is really amazingly good.

Never would've guessed you could make cheese from yogurt... same basic principles as cheese though. That actually does sound intriguing, and I might try it, since my cheese addiction got me where I'm at, and it might help in undoing it too, heh. What's the flavor and texture like?

String Cheese.  Seriously.  It is the perfect amount to satisfy my cheese craving, but small enough to not kill my calorie count for the day, nor go over sodium amounts.  I like the 2% mozz & cheddar twist, but they have so many different kinds ranging from 50 calories to 100 calories...depending on how intense your cheese craving is, I depend on these when I need cheese.  As far as cooking with cheese, I can't tell much of a difference in the 2% kinds, however the fat-free are a no go and definitely aren't satisfying.  If you're going to eat it, eat it, but do so in moderation :)
