OK, at the deli they have all these potato salads, creamy macaroni salad, pasta salad etc. I thought I'd try the three-bean salad as it looked healthy by comparison.
What I was wondering is, there is an extra flavor there, a bit tart, there is nothing but the tiniest amount of a clear liquid. If I had to guess it is a little bit of beet juice and vinegar and maybe some kind of onion. Does anyone know what typically gets added to a three-bean salad?

Hi Mol - three bean salad often has lots of sugar added to it. My father, who loves it and is diabetic cannot eat it (I'm diabetic too, but I'm not crazy about it anyway)
Good news is that 3 bean salad is easy to make at home and takes well to sweetner instead of sugar.
Other good news is that given the choices above it's still far better then anything with mayo, especially if you do not have any sugar issues.
