| Is there a healthy way to fry? |

I've read and heard that there are healthy, lower cal ways to fry and deep fry foods but I'm confused. I'd like to try deep frying tofu, onion rings, sweet potatoes, etc. Does anyone know which oils are best for frying, temps to fry in, etc?
Also, I've heard some hoopala concerning microwaving - that it distroys vitamins and minerals, changes the fat content to trans fats, etc. Does anyone know of any articles on the pros and/or cons of microwaving?

Use an oil spray (I use a 1 calorie spray - I hear that there's even less out there). Or use water to stir-fry. Frying with the wrong kind of oil at high temperatures (when the oil turns brown) creates trans fats.
All cookings causes some loss of vitamins/minerals compared to raw, but microwaving does much better than boiling, for instance, because you don't add much water.

Just as an aside, I have heard that whereas cooking does destroy some of the vitamin content, it also allows the body to absorb more nutrition and calories.
Not a problem in our food deluged nation, but where food is scarce, cooking can make a big difference.
