I work 3am to about 10am-11am
I usually sleep noon to 6pm-7pm
Right now I usually have a couple sandwiches after I wake up and have a few snacks throughout my shift.
I know I need to find something healthier to eat, but is it healthy to have one large meal when I wake up and snack the rest of the day? Or should I find time for another meal in there somewhere?

the healthiest foods to eat are vegetables, beans and fruit - most of us don't eat enough of them.
many people find that eating several times a day, anything from 3 to 7 times a day, keeps them "compliant" and helps them make the healthiest food choices.
In reality this is partly because the body is kept busy digesting the last meal or snack.
A somewhat more "advanced" thing to do - once compliance (sticking with healthy choices) is no longer an issue, is to actually increase the time between meals - eating 3 (or even just 2) meals per day with no snacks. The body does some useful 'detox' work - and it does it more effectively when it is no longer busy digesting. The trouble is that the time period may feel rather uncomfortable - especially if you used to eat a bunch of junk that the body needs to get rid off - much like the withdrawal symptoms when stopping a drug.
If you're just starting out, focus on making healthy choices - increase your intake of vegetables, beans and fruit.

| Well this new shift pretty much killed my appetite, so the time between meals isn't an issue, I just need to find healthier foods and I need to know when to eat so I avoid that 'starvation mode' thing.

If you read about Intermittent Fasting (such as 'Eat Stop Eat' e-book) you can appreciate that 'starvation mode' is not a concern even if you just eat one meal per day (so long as this meal provides enough calories and the nutrition your body needs. Timing of the meals is not particularly important.
Conversely, I could eat every waking hour but if I was only eating 50 calories that might only total (50 x 16 = 800 calories) and that would be far too low for most people. See my point?

There are really know hard and fast rules on when to eat. Some people eat twice a day others eat 7 times a day. When losing weight I advice people to eat often... about every three hours. Eat clean, nutrient dense food and eat often.

Yes, beans are healthy and good for most people (some people have gas when they eat beans) but it's a good idea to soak them overnight for about 12 hours. They are very versatile because you can have rice with them one day and chicken the next.
A little bit goes a long way with beans too. If you cook them slow for 2 hours and add sea salt, pepper, onions and garlic, they last for 3 days in the refrigerator. Pinto beans, black beans, etc.. are all good.

| I'm tinkering with my night time eating to limit it to vegetables- a bowl of veggie soup maybe with a little meat and a big salad.

To me, the most important thing to do is plan ahead. I once had a job where every other week my shift changed and it really screwed up my eating habits.
If you don't plan ahead and have healthy food ready to eat when you need it, then you may binge when you get really hungry. Bingeing is almost never good for your diet.
I like your idea of eating a series of healthy snacks at work. Just make sure to plan ahead and have a variety of healthy snacks available!

You still need to eat your meals and not just snacks. You can eat that at your break time.

Eat small meals and often! Less chance of getting hungry that way! Its all about controlling that hunger and same way you do excercise you train your self to eat.
