It actually doesn't look that orange in real life... It's very yellow.
I was just experimenting, and I came out quite tasty!
Ingredients:
About 2 1/2 cup of steamed and mashed pumpkin
About 1/2 cup of soy milk.
I made the pumpkin first...
Chopped up pumpkin, and put them in a steamer for around 30 minutes.
Then I scooped out the flesh, and put them in a pot over a stove. I mashed up the pumpkin with the heat turned up.
That's how I made the steamed mashed pumpkin.
Then, I took around 2 1/2 cup of the pumpkin and put them in the blender.
I also added about 1/2 cup of original nautr-a soy milk. I suggest to start with less that 1/2 cup, and add more if you think you need more.
Blend those two in the blender, and you're done!
It has a very smooth texture.
You can eat it cold, and I think eating it heated up would also taste delicious.
It serves around 3.
Ha! I dug into the bowl thinking I could finish it off in one sitting, but it filled me up after just eating about a third of the bowl.
For the whole mixture:
Calories: 173
Fat: 2g
Cholest: 0mg
Sodium: 50mg
Carbs: 35g
Sugars: 8g
Fiber: 9g
Protein: 8g
And a TON of vitamin A.
Note - You don't have to make it all in one day. I steamed the pumpkin first, then mashed it. Then I made it into the pudding the next day..
It has just the right amount of sweetness!
I'm not sure of how it would taste with regular milk though.

Note - My mother found this pumpkin pudding to be DIGUSTING!
On the other hand, my dad LOVED it!
Sooo, I'm not sure if it tastes good or not... But my dad and I do have an odd taste for food...

| Sounds like it would be good with pumpkin spices too. Not everybody likes pumpkin, that's maybe why your mom didn't like it. It's one of those, either you love it or hate it kinds of food.
