Does anyone have any healthy eggplant recipes that do not involve frying or making ratatouille (can't stand it)?

When I'm lucky enough to get hold of an aubergine (that's what we call eggplant in the UK) I microwave it for 5-10 minutes and then I either eat it like that or I put it in the food processor with some spice mix - the result is a spicy dip.
Dr Fuhrman has a recipe where he mixes cooked aubergine with a tin of chick peas to make a lower-calorie humous.

You can also grill it with a little olive oil on a BBQ or equivalent!

Slice the eggplant lengthwise into thin slices. Spray on both sides with cooking spray. Put in oven at 400 until soft. How long depends on how thinly you can manage to slice the eggplant, 30-40 minutes.
You can then make yummy vegetarian sandwiches with the sliced roasted eggplant. Especially good with crusty bread, sprouts, tomato, maybe even some fresh mozzarella cheese.

Hi their there are various dishes u can make with egg plant
Roast an egg plant and peel of the skin.
Put the pulp into a food processor and make a paste out of it.
In a non stick pan add very little oil and add some onions and ginger and garlic ( u can emit garlic or ginger if u wnat to).
Once the onions loose there rawness and are translucent add tomatoes.
Once the tomatoes soften add salt and pepper as per ur taste and add the eggplant pulp.
cook for 2 more min and shut of the flame.
Sqeeze a lemon if u wnat to before u eat it.
Eggplant with potato and peas
Chop the eggplant into small cubes
In a non stick pan and small amount of choped onions and potatoes and peas ( u can eliminate the potatoes if u wnat to)
Stir for a few min and add eggplant stir for a few more min and add tomatoes and water. add salt and pepper according to ur taste
U can also add spices like dry cumin powder and corinder powder if u want to
Remember to add lemon juice once the dish is cooked. It may take 10-12 min time
Garnish it with parsely or corinder leaves.
Roasted eggplant
Take a few long egg plant and cut them into small rounds.
marinate them for 1 hour with salt pepper and lemon juice or vinegar.
In a non stick pan spray some cooking spray and add these rounds
keep cooking till they loose there rawness.
U can also add tomatoes, onions, bell peppers, peas , cabbage
add the salt and pepper as per ur taste.

| I JUST LIKE CUTTING IT INTO THIN SLICES & SLICING SLITS INTO THEM & POP THEM INTO THE MICROWAVE TILL ITS SOFT LIKE 3 MINS. & GARNISH IT WITH BLACK PEPPER, GARLIC POWDER, PARSLEY FLAKES OR OREGENO, PARMESON CHEESE & THEN DIP IT IN APPLE CIDAR VINEGAR . & OPTIONAL PAIR IT WITH BROWN RICE.

I love using lightly grilled aubergine/eggplant slices as a substitute for sheet of lasagna! What's that called? Pasta-less lasagna or moussaka?
There's also an interesting recipe for moussaka where you fry up everything in a pan (minced beef, onions, herbs, cinnamon, aubergine cut into chunks, tomatoes and tomato purree), stick the mixture in an oven dish, arrange thin slices of potatoes to cover it, cover that with a topping of egg yolks, yogurt and grated cheese and bake the lot at 190?é??C (375?é??F) for about an hour. You could do a work-out video while you're waiting for it to be ready because it's about 400 calories per serving!!! I am going to try it soon but with half the potatoes (300 grams) and no egg yolks, as a way of trimming down a few calories.

Here's the new, improved recipe. I just tried it out and it was a big hit with the whole family. I boiled the potatoes first to save oven time. Things like beef and cheese were limited to reduce the calories.
Beef Moussaka Serves 4 - 370 calories per serving
500 gr. Potatoes
1 tbsp olive oil
100 gr. Chopped onion
170 gr. 5% minced beef
200 gr. Aubergine
250 gr. Canned diced tomatoes
75 gr. Grated mild cheese
125 gr. Low fat plain yoghurt
1 egg yolk
Cinnamon
Italian spices (no salt needed!)
Peel potatoes and boil for 10 minutes, remove, cool and slice thinly. In a deep pan saut?â?® onion in olive oil, add minced beef, aubergine, canned tomatoes, cinnamon and spices. Cook until the aubergine is soft and all is well mixed. Pour the meat, aubergine and tomato mixture into an oven-proof dish and cover with the slices of potato. In a separate bowl meat together the cheese, yoghurt and egg yolk and then spread evenly over the potatoes. Bake in the oven for 35 minutes at 190?é??C or 375?é??F (mark 5).
