This is so good! I use my george foreman grill for it! delicious! (you may have left overs for another wrap)
1 chicken breast cooked- (preferably either on grill or basted in a steam bath in oven- take aluminum foil make a pocket- fill with a little water and cook as usual)
1 red pepper (sliced)
1 yellow pepper (sliced)
1/2 portabella mushrooms (sliced)
1/2 small red onion (sliced)
1/2 avacado (ripe-cut into small chunks)
1/2 zucchini (sliced)
1 breast of chicken
1 low fat wheat wrap
1tlb tomato pesto (see recipe--- 1 small container of tomato paste made with oregano, add 3tbl olive oil mix well)
balsamic vinegar
olive oil
Take all vegetables and marinade in Balsamic vinegar and olive oil (use as much to evenly coat veggies- or put in spray bottle and spray on veggies)...let sit about 3 min. Turn on your george forman grill. Place all veggies on the grill. Cook 6 min until veggies are done.
Place 1 tbl of pesto mixture and spread on wheat wrap, put in microwave for 33 seconds.
Place cooked veggies on warmed wrap, add cooked chicken- put in microwave for 30 sec or on george grill for a 1/2 minute.
Fold wrap and Enjoy!
