So, I found a recipe for Breakfast cookies in an issue or Nick Jr. magazine (either August or September) and ever since I've been trying to change my eating this year, I've been looking for a healthy, balanced baked goodie. Here is what I have come up with when modifying the recipe. I'll post the original after my "Healthy Cookies".

Healthy Cookies

1 c whole wheat flour
1/2 c all purpose flour (unbleached)
1 1/4 c old fashioned oats
1 c vanilla whey protein
2 T ground flax seed
1/2 c brown sugar
1/2 c splenda (for baking-that measures like sugar)
1 1/2 t baking soda
1/2 t baking powder
3/4 t cinnamon
1/4 t salt
1/3 c applesauce (all natural, unsweetened Motts in individual servings--one serving cup)
1 small or 1/2 large orange blended (in a blender)
3 egg whites
1 t vanilla
2/3 c finely chopped dried fruit (apricots and cranberries 1/3 c each)
1/3 c finely chopped walnuts

Mix all the dry ingredients (ww flour, flour, oats, whey, soda, powder, cinnamon, salt) in a bowl-except sugar & flax. Add the dried fruit and nuts to the dry ingred., mix and then set aside. For the wet, I blend the orange in a blender and then dump in the rest of the wet stuff and the sugar and blend those together as well. Combine the wet and dry. Drop cookies onto silpat and bake @ 350 for approx 7 minutes.

For me this recipe made 36 cookies that are about 2 1/2 inches across--77 calories apiece (calculated from my specific ingredients).

I keep over cooking them, so that combined with the lack of oil/butter has made them a little dry. But they're really pretty good.

Here is the original recipe:

Breakfast Cookies

2 c all purpose flour

1/2 t baking powder
3/4 t cinnamon
1/4 t salt
1/4 c applesauce
1/4 c orange juice
3 T unsalted butter
3 egg whites
1 t vanilla
1/3 c raisens
1/4 c apricots

I don't have the actual instructions, but if you mix the dry ingredients, and then the wet, and then combine them--usually that's pretty good. Oh, and these said to bake at 350 for 10-11 minutes.

Low Carb Chocolate Chip Cookies

1 cup butter, softened
1-1/2 cups Splenda or Maltitol Crystals
1-1/2 teaspoons dark molasses
2 large eggs
1 cup almond flour
1 cup vanilla whey protein powder
1/4 cup oat bran
1 teaspoon baking soda
1 teaspoon salt
12 ounces sugar free chocolate bar, chopped into small pieces
1 cup chopped walnuts or pecans

Preheat oven to 375?é??F. Line baking sheets with parchment paper or a non-stick baking mat. Beat together butter, Splenda, and molasses until light and fluffy. Add eggs, one at a time, and beat well after each addition. In a separate bowl, stir together ground almonds, vanilla whey protein powder, oat bran, baking soda and salt. Stir almond flour mixture into butter mixture until blended. Stir in nuts and chopped chocolate bars. Drop by rounded tablespoons onto preparted baking sheets. Flatten with palm of hand. Bake for 10 minutes, or until golden. Allow to cool for 2 minutes on baking sheet then remove to wire racks to cool.

I like low carb cookies very much and specially during Christmas.
