This is a treat meal that I make once in a while to show my family that healthy eating does not mean bland eating.......It is a great way to get them to eat fish!
1 tbsp melted butter
4 tbsp Dijon mustard
1 1/2 tbsp honey
1/4 cup bread crumbs
1/4 cup finely chopped pecans
4 tsp chopped fresh parsley
4 4oz fillets of salmon
salt and pepper to taste
Peheat oven to 400 degrees F
In a small bowl, stir together butter, mustard and honey, set aside. In another bowl, mix together bread crumbs, pecans and parsley.
Brush each fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
Bake salmon 12- 15 mins in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper
Tips: I use whole pecans and just throw them in a ziplock bag and mash them with a rolling pin.
I use prepared honey mustard and throw in a tbsp on dijon mustard, omitting the honey
I use 1/2 tbsp of dried parsley
I omit the salt.....not needed
This dish goes well with anything from salads to brown rice.....mmmmm
