This is a meal I like to make on a busy weeknight....quick and painless!
1/2 500g pk spaghetti or fettuccine (I use flaxseed spaghetti)
1 bunch broccoli
1 large carrot (I use baby carrots cut into thrids)
1 yellow pepper cut into strips
4 centre cut pork chops (I use boneless pork chops)
1 tbsp cornstarch
1/2 cup teriyaki sauce
1 tbsp dark sesame oil
1 1/2 tbsp hot chili-garlic sauce
4 minced garlic cloves
Vegetable oil
1/4 cup water
Prepare pasta as per package intructions
Meanwhile, chop broccoli, carrots and peppers. Trim fat from pork and cut into thin bite sized strips.
In a bowl, stir cornstarch with 2 tbsp teriyaki sauce until dissolved. Stir in remaining teriyaki sauce, sesame oil, chili-garlic sauce and garlic.
Lightly coat a large frying pan with oil and set over med-high heat. When hot, add pork. Stir often until no pink remains, 4-5 mins. Stir, then pour in teriyaki mixture. Add broccoli, carrot and pepper. Pour in water. Stir often until veggies are done as you like.
Once pasta is cooked, drain well. Place in a large bowl and add pork mixture. Toss to evenly coat.
26.6g or protein, 8.1g of fat, 63.5g carbs, 430 calories.
I also add half a chopped red onion and 1/4 tsp of red pepper flakes for some added spice!
