Arrabbiata is the Italian word for 'angry' - meaning the spicy tomato and red pepper sauce. You can lighten it by using less red pepper flakes, but I normally use more than what is called for.
6oz linguine
2 tbsp olive oil, divided
1lb large shrimp peeled and deveined
1/4 tsp salt
1/2 cup chopped red onion
2 tsp bottled minced garlic (can use more)
1/2 tsp dried basil
1/2 tsp crushed red pepper
2 tbsp tomato paste
1 (14.5oz) can diced tomatoes undrained (I like to use stewed tomatoes)
2 tbsp chopped fresh parsley
Cook pasta according to directions
Heat 1 tbsp oil in pan over med-high heat. Sprinkle shrimp with salt; add shrimp to pan and cook 2 mins on each side or until done. Transfer shrimp to a bowl
Heat remaining tsp oil and add onion, minced garlic, basil and crushed red pepper to pan, saute 1 min. Add tomato paste and tomatoes; bring to a boil, cook 3 mins or just until sauce begins to thicken.
Return shrimp to pan; cook 1 min or until thoroughly heated. Add parsley to pan, stirring well to combine. Serve over pasta.
4 servings
About 1 cup shrimp mixture and 1 cup pasta

This is quick and easy, great for a weekday meal!
